Paysanne

The attractive little estuary town of Deganwy in North wales, with its recently opened marina has something of a Mediterranean atmosphere about it. This is something that has been accentuated since 1988 when Paysanne, the family owned restaurant specialising in French-style country cooking, first opened.

Bob and Barbara Ross opened Paysanne to "a roar of apathy" as he recalls in the international bestseller (sort of), "The Paysanne Cook Book." There is no family connection to France, just a great love of their attitude towards food. Back in 1988, Paysanne flew in the face of contemborary fashion for Nouvelle Cuisine, when 25% of a duck breast and a dressed salad leaf arranged on a plate the size of a dustbin lid would set you back forty quid.

Barbara's bibles were written by Elizabeth David and so the good people of North Wales were soon being treated to Cassoulets, Marmites and Carbonades, all assembled with the freshest ingredients and never rushed. With the kind of fresh fish and local meats available in this area, simplicity is the key - plus a decent bottle of wine or two.

Having retired down to the Languedoc, Bob and Barbara have cultivated some new wine-producing chums to ensure an unique (and extremely reasonably priced) wine list at Paysanne. All the wines have been personally sourced over twenty gruelling years of tasting, spontaneous hugging and groggy mornings. Many of the wines on the list have been with us since the beginning, including our Sancerre, Gigondas and Vacqueyras wines.

The restaurant continues today with Bob and Barbara's son Cai at the helm, steering the ship while his parents spend his inheritance in style.
